Wine:
Arguably the most complex of all the lieux-dits, the 2019 White Ermitage Le Méal is a gem of richness and finesse. Pear, melon, and citrus flavors mingle deliciously in an ultra-fresh palate that lacks neither generosity nor breadth. The zesty, slightly saline finish marks its graceful identity; a great white wine to reserve for the table, with a delicate fish, in a few years. Rated 96+/100 by Parker.Vinification:
Hand harvested, whole grapes pressed, vinification 50% in new demi-muids and 50% in vats, aged 100% in barrels with stirring between 10 and 12 months.Organic and Biodynamic wine, certified by Demeter.
Color:
Pale and bright golden yellow.Nose:
Aromas of yellow fruits, pineapple and lemon, accompanied by sweet honeyed notes.Palate:
Ample and structured, this bottle with a mineral character delivers a complex and authoritative palate, with a fine bitterness on the palate.
Temperature:
Serve between 10 and 12°C.Food and wine pairing:
Scallops on a bed of leeks, poached poultry with cream.Cellar aging:
From now until 2038.
