Wine:
From vineyards adjacent the future Pouilly-Fuissé "premiers crus", we are instantly charmed by the mineral character of an extraordinary Mâcon Fuissé 2009. The whole is rich, iodized and perfectly balanced, releasing a variety of floral and white fleshed fruit aromas. It carries the breeding of its "terroir" like a battle flag, a real tasting experience.Vinification:
Clean, painstaking viticulture, hand harvesting at full maturity while taking care to retain very good acidity. Whole grapes are gently pressed for 4 hours, the juices are transferred into casks applying only gravity, 12 months cask-aging on all the lees, no fining or filtration, bottled by gravity.
