Hand harvested, totally de-stemmed. Fermentation in temperature-controlled stainless-steel or concrete vats, vatting for 20 to 25 days with gentle extraction methods, delestage at the start of fermentation, then pumping-over 1 to 2 times a day. Aging of 50% of the harvest in vats, and the remaining 50% in 400L barrels of several wines. |
