Pure Chasselas, the 2022 white Lavaux Grand Cru Villette La Bolliattaz comes from monopoly vineyards planted at 500 meters above sea level on clay-limestone soils. It's a terraced vineyard, very steep and facing due south towards the Alps. Aged on fine lees, this white wine reveals itself delicately, opening with a very crystalline nose. What follows is a skillful balance between richness, minerality, and freshness, where notes of flint, white fruits, juicy pear, and white pepper blend in a sharp, mineral framework with lovely sapidity, supported by great maturity. What a wonderful surprise this refined, expansive white wine is! A wine for fine dining and keeping, perfect to accompany pike quenelles, sole meunière, or a fish terrine. Hand-harvested, grapes are sorted into small crates to preserve berry integrity. Gentle pressing and slow fermentation. Aged on fine lees in oak barrels. Light filtration before bottling.Demeter-certified organic and biodynamic wine.
