Wine:

What an achievement! The 201! White Ermitage L'Ermite offers admirable definition and absolute purity. This exceptional white wine is perfect, offering intense and fruity aromas and a vibrant, fresh and generous palate. Rated 98-100/100 by Parker, it has a great future ahead of it!

Vinification:

Hand harvested, vinification in barrels between 18 and 20°C. Aged on lees with regular stirring for 1 to 12 months. Organic and Biodynamic wine, certified by Demeter.

Color:

Bright pale yellow.

Nose:

Aromas of vanilla, almonds, dried fruit and lime blossom with a marked minerality.

Palate:

Rich and round, this wine has an elegant balance, supported by a slight bitterness.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Aumônières of scallops, capon with yellow wine and morels, pan-fried foie gras.
