Wine:

The 2021 red Saint-Chinian Sortilège unveils itself with finesse and a delicate fruitiness. Aromas of rose, spices, potpourri, and flowers mark both the nose and the palate, creating a complex and voluptuous texture! A truly elegant red wine, best enjoyed in good company with poultry. A favorite of the Committee, rated 93/100.

Vinification:

Hand-harvested, totally de-stemmed, vinified with indigenous yeasts, aged 18 months in 3, 4 and 5-wine oak barrels, then one year in vats.

Certified organic and biodynamic wine.

Color:

Very dark, almost black glossy red.

Nose:

Beautiful aromatic bouquet with scents of rose, flowers, spices and pot pourri.

Palate:

This wine is dense and elegant, with a beautiful aromatic complexity and voluptuousness!

Temperature:

Decant before serving, between 16 and 18°C.

Food and wine pairing:

Simmered meat, pâté de campagne, stuffed capon, pork tenderloin with sage.
